Think Like a Chef
Categories: Cookbooks, Food & Wine
In Think Like a Chef, Tom Colicchio, co-founder of Gramercy Tavern, sets out to teach home cooks how chefs think rather than offering a set of restaurant recipes. He begins with techniques such as roasting, braising, sautéing and making stocks and sauces. He then introduces building-block ingredients like roasted tomatoes and braised artichokes and shows their many uses. In a section called Trilogies, three ingredients combine into one quick dish and others of increasing complexity, followed by simple recipes for components.

- Seth Godin: “After that, I bought a few foundational books: Think Like a Chef, some books from Alice Waters, Daniel Leaders’ groundbreaking books on baking. I didn’t buy books of recipes. I bought books where someone who understood how to cook had a narrative about how it all fits together.”
