The Apprentice: My Life in the Kitchen (2003) is Jacques Pepin's memoir of learning to cook in wartime and postwar France and building a career in America. He recalls his mother's restaurants, harsh kitchen apprenticeships, serving as personal chef to Charles de Gaulle, and later years with Howard Johnson's, Columbia University and television cooking shows. About forty recipes sit beside the life story.
